Sicilian's Table Olives Nocellara del Belice DOC black, green sweetened and salted green (salt + water)
Olives of "Nocellara del Belice" takes its name from the Belice Valley, an area that includes the towns of Castelvetrano, Campobello di Mazara, Partanna, Santa Ninfa, Poggioreale and Salaparuta. La Nocellara del Belice is a very popular variety for its dual-purpose oil-table. The plant of cv. Nocellara del Belice is moderately vigorous with flared hair and pendulous. The leaves of the Nocellara del Belice, glabrous, straight and wide, are colored bright green on the upper side, while the undersides are gray sage tending silver. La Nocellara del Belice is a variety characterized by self-incompatibility therefore can only be fertilized by pollen from other varieties. During implantation is therefore necessary to add pollinator varieties such as Biancolilla, Giaraffao the Carbucia. The fruit of Nocellara del Belice is of large size, 5-7 grams, with firm texture, crunchy and slightly bitter. The drupe, spherical in shape and with wide base and rounded, prior to coloring varies from deep green to wine-red when ripe. Nocellara Belice is one of the most important varieties of table olives, work is in green to black, for the good size of the fruit, the pulp stone ratio greater than 4, the sugar content 2 and for pulp of easy separation from the core. The olives of the variety to be used for the table must have a diameter greater than 18 mm.
