The Pecorino Siciliano is a cheese with a protected designation of origin produced exclusively from sheep's milk in Sicily.
The Sicilian Pecorino cheese is a cheese that comes from classical greek world. Already nell'anticità has been recognized as one of the best cheeses ITALY and the world. On 12 June 1996, the European Commission acknowledges the PDO with an EC regulation no. 1107/96.
The pecorino is produced exclusively from sheep's milk raw whole to which is added the rennet in a vat of wood. We then move all'incanestratura and after salting. It can be consumed at a level greater or lesser degree of maturation. Its characteristics change according to the level of seasoning, although in order to be branded requires a minimum of four months of ripening.
It is produced in Sicily, but especially in the provinces of Agrigento, Caltanissetta, Enna, Trapani and Palermo
